Happy Valentine's Day Tuesday!

    Happy Valentine's Day Everybody!

    Jim and I have decided to head out to "The Cheshire Cat" for lunch and then I'll do some Valentine's appys in the evening as we won't be hungry for a regular dinner. I have found a nice looking shrimp recipe in one of my Cordon Bleu cookbooks entitled "Shrimp with Avocado Cream". I think I'll also try Linda's suggestion of baked perogies.

    Had a WONDERFUL chat with Benjamin online before breakfast. He is getting a new class of students (thus increased pay cheque) and is signing a lease on a new apartment on Thursday. It's a lovely building and complex, quiet, has a balcony (was on his wish list) and a kitchen (no oven, but stove and fridge and microwave), and has two bedrooms. Angel is coming to visit him this weekend and he may move this weekend as well. He is elated and thus, we are elated for him. :) He also sent us his school calendar that shows their stats and holidays and he has four days off in May so he asked if Jim and I might consider visiting him that month, meeting up in Hong Kong for a few days so he can tour around with us and then going on back to Pingtung. I think that might just work. Grinning from ear to ear.

    Happy Birthday to Den today Joce! Are you going to make him a birthday dinner tonight at home?

    Held off posting 'til now as I was hoping you'd put up some birthday pics of Bri's party Michelle but you must be busy.

    Congratulations to Ben on his promotion, Janet. I am also pleased he found a nice apartment and will have a few days off in May so you can visit and tour around. Will you be staying with him in his new apartment or is he planning to find a roommate to share the rent with him? Enjoy your lunch at the "The Cheshire Cat". They always seem to prepare such wonderful food for you. Also, Den says thank you for your BD wishes as well. We have so much snow it is ridiculous but I do feel sorry for the people down East in Nova Scotia, NB, P.E.I. they got over 75 CM and we only received about 25 CM many are without power and the snowploughs are getting stuck! Bring on Spring!
    At the moment I am stuffed from having MacDonald's for Breakfast. Den has requested filet mignon for dinner with a baked potato and steamed green beans and chocolate cake for dessert. I am feeling a bit better today my sore throat is gone and if I feel up to it I will stuff some strawberries. We shall see.

    What are you stuffing the strawberries with, Joce? Wow on the snow. Repeating my offer to take some of it off your hands.....we got a bare sprinkling of rain that hardly dampened the ground. It is about 50 F more or less and I am stuffed from breakfast. Most of the rain moved South into Arkansas, leaving us dry. Again.

    Saw a pretty imitation of Fabrege eggs, smaller but pretty. Slapped my hands....ha ha...don't really need it and no idea where to display it. But it was really nice.

    Well, guess I best scoot. See you later.

I personally am against staying with him for that length of time. Parents are nice for a few days but after that they tend to get on one's nerves no matter how much you love them. :) I KNEW Den was going to choose steak for tonight. LOL. :) Good choice. And nice at breakfast out at McD's as well. NICE on chocolate cake and yum on the strawberries. Stuffed with a cream cheese mixture? Glad to hear your throat is feeling better.

    Lol, Janet, As my Mom used to say after three days company start to smell like fish:) If I do the strawberries today they will be stuffed with cream cheese mixture and I thought I would add some cocoa to some of them and see how they taste. I will also garnish with grated chocolate as well. It is a Chefmeow recipe from one of her Estate books she bought I believe.

    Hi Karen!

    Of course I waited until the day it’s supposed to pour down to go to the store :( I tried really hard to be out the door early to beat it, but it didn’t happen. My umbrella only did so much, it was VERY windy and the rain was coming in sideways. Ugh. Came home soaking wet, but now I’m in dry clothes and happy it’s over lol :) I guess the upside to all of it is that there wasn’t anybody in the store, and my main worry was it would be packed with everyone getting last minute VD groceries.

    Also, the mall scavenger hunt went great! They finished way too fast though, so I should have made the list longer. Oh well! I was just worried it would be too long, and they would get bored, but it was opposite lol.

    Found lobster tails on sale for a steal! $3.50 a tail! Going to do filet mignon with lobster, baked potatoes and asparagus, with a side salad. I want to make a homemade dressing to go with it. Also I am going to pull down my fondue pot so we can all do chocolate fondue with strawberries, pretzels, pineapple and marshmallows. Should be a hit dessert with the kids :)

    Bri’s real birthday is on Thursday and she has a long request list. She wants me to make her chocolate chip muffins for breakfast, double chocolate cookies to take to school, chocolate cupcakes to take to softball that night, and spaghetti and meatballs for dinner. YIKES! So I am starting today with the chocolate muffins. I may try and get to the cookies, but not sure if I have enough time with all I need to do for dinner. Will try though!     Hi Michelle! LOL @ the girls whipping through the scavenger hunt. That's adorable. Awesome price on the lobster tails. Your dinner sounds divine. The chocolate fondue will be the icing on the cake. So cute that Bri has a request list for food on her birthday day. :)

    When I told Benjamin I was going to make perogies tonight, he said "I'd kill for some perogies". That is something you just don't see there although if he researches hard enough maybe he'll find a Polish restaurant there somewhere. :)

    Oh My Michelle, Bri really does have her chocolate requests but can't say I disagree. Chocolate is a wonderful thing.

    Not much going on here today. Need to get the beef stew started soon. Finally got all resolved with American Express. I had to call the corporate headquarters today and talked with a woman who was more than helpful, a treasure in her own right. She told me how to set myself up as an account manager so that they would talk to me. Once that was done I again made the phone call, had to argue with the woman after answering about 50 questions, then I had to tell her go back 3 weeks and look at that problem, there was no reason to confirm my recent charges. FINALLY found out what is was. The charge was denied. Seems someone was trying to charge $2492 worth of merchandise from some ecommerce site. So DH's card is cancelled.

Yesterday when on the phone arguing with a woman who would not help even though Amex was in receipt of my POA from a Lawyer she kept insisting to speak with my husband ... so I put him on the phone. Now mind you he understands what's going on (may not remember some things in past but does understand current) and he can only make sounds that sound like a monkey (ooh, aah, uuhh, taadaa daa). Well he proceeded to yell at her for about 5 minutes in monkey. The scene was so surreal all I could do was laugh and laugh hysterically and I still laugh when I think about it. Not laughing at him but just the whole thing.

I brought 1/3 of it home for my crows. :) Jim had the Butter Lamb curry over fries with tomato chutney. He actually finished all of his with the exception of some fries. He tried a new 'black' craft beer and I had a cider. So cozy at the Pub with the wood stove going. When Benjamin first moved to Pingtung in August he was in a rush to find an apartment as he only had a short time to move and get settled before his new job started. It was fine but it basically had no kitchen except for a sink and fridge I think. So when he had been at the school long enough and passed the probation period and knew he was going to stay for awhile he wanted to look for a new place. His wish list was that it would be nicer, that it would have a kitchen, would be in a nice area of PIngtung and ideally it would have a balcony. This new place has two bedrooms as well so if he rents out one room it will really help with the expenses and actually be cheaper for him than this current apartment. He's really thrilled. Glad to hear you finally got things all straightened out with American Express. Goodness on someone trying to charge over $2000 worth of stuff to DH's card. :( I can see the humour in putting DH on the phone. :)

    Wellington is great but windy - reminds me a bit of Halifax or St. John's with the harbour and all of the older wooden buildings up the hills. There is a beautiful revitalized waterfront area that is great for walking and taking pictures - I did both and now the next step is to put some of them on Facebook. The food choices are not quite what I had hoped but I did have a really nice smoked salmon and avocado salad for lunch today. Not sure what I will find for supper but hopefully something will turn up. It is summer here but not all that warm with highs of only about 20 and lows around 10 each night. Given that my clothing is all tropical in nature, I am struggling a bit.
    Just trying to read back now but thought I would say hi.
