Instant Pot Mania Monday

    Good Morning Everyone! Just a quick shout out before I head off to work at my girlfriend's Flower Shop shortly. Wishing everyone a great day.

    Saw a really nice looking chicken recipe for an Instant Pot yesterday.

    Dinner disaster last night. My roast was still frozen in the middle when I put it in the oven. It got to be 8:30 and it was no where close to being done, so I pulled it and the potatoes out, let them cool then stuck them in the fridge. We'll have that for dinner this evening and we just had Chicken parm leftovers for dinner instead. Argh.

    Gotta run. Wishing everyone a great day. Got an awesome message from Benjamin when I woke up and he sent tons of photos, some of which I've shared on my FB page. So fun!

    I'm nibbling on what's left of my Spider Cake, so good! I like it even better cold even though the texture changed. Will have a cup of cold brew next.
    A girlfriend had recommended the show "This is Us" to me so I taped the first season and have been watching it after DH goes to bed. OMG!! What an awesome show. There is just something in each episode that hits you and I'm not ashamed to say that I drop a few tears. It's just a great show and so well written.

    Kimmer if you are enjoying your instant pot I'm sure you will be happy with the homemade condensed soup too to use for recipes. Awesome your soup turned out so well and DH's appetite is good and that he had 3 bowls!

    We had the most amazing rain shower yesterday. I never seen anything like it. It started raining heavy around 4:30 yesterday but the sun was out and the way it was positioned and the dark clouds above you could see every rain drop falling from the sky. It looked like a shower of diamonds in slow motion! It was so amazing!

    Lol, I am not totally awake yet:) Den is going to paint and tile another storage room in the basement now. He must be getting bored or just wants it done now after the nice job he did in the Freezer Room. Everything is icy and frozen solid outside so we will have to put some salt and sand down on the walkway and driveway. The trees are sparkling in the sunshine it is quite pretty outside. Dinner will be chicken something.

    That's great Den is remodeling another storage room Joce. You'll have to ask him his reasoning to know for sure. Yuk on the icy winter-wonder-land but I bet it sure looks pretty. Chicken sounds good. I'm going to make chix breast in the crock pot tomorrow using the condensed soup I made yesterday. I wanted it for today but the chicken wasn't thawed yesterday and I didn't have time to get it going this morning.

    I am going to start watching "This Is Us" as well Linda. I keep hearing about it from everyone, so I guess it's time lol. Too neat on the rain shower, we have had a few like that before, beautiful. Glad the doctors went well!

    Sounds like Den is keeping himself busy Joce! I almost did chicken something, then realized I was out of chicken.

    We had a tournament this weekend an hour and a half away and it was a LONG, rainy, cold weekend. Girls did great, didn't place, but was close, I think we came in 4th?

    I am exhausted today, but have a ton of laundry and catching up to do. I got these in the slow cooker Honey Mustard Short Ribs In The Crockpot but I have no idea what to serve it with as we've had potatoes quite a bit and I am pretty much out of veggies besides carrots and some cabbage lol. I'll figure it out! This cold weather just won't go away. By now it's usually not this cold :|

    That's awesome that your hubby is getting out of the house some Kimmer, he must be doing great!!

    Whatever the reason, it is great that Den is inspired! Wayne's buddy will be back next week so they will hopefully accomplish some past due tasks! It is beginning to thaw so the barnyard / yard / grass is not a sheet of ice. J is treacherous because of shady areas but we don't have to go anywhere until tomorrow so hope it melts by then.

    At the rate I am progressing, Michelle, you will be cooking in you IP that you don't yet have before I get courageous enough to try.

    I found some frozen chicken thighs so will fix something with them for supper. Refrigerator has a few oranges, a lemon, a strange veggie (that I can not think of what it is called bec haven't used one for ages), and a few carrots that MUST be cooked ASAP, so ideas for sides are limited. I may try to pick up something at the Mannonite store tomorrow since they carry organic veggies. There is a bag of stuffing mix....will have to use that soon also. If the open box of chicken broth is still good it would flavor the dressing well. Ah, well, best get creative! Leftovers for lunch!

    Mel is doing well. He is beginning to fuss about meds so that is a good sign....probably have to wrap him in a towel one of these times. He usually is quite tractable, the vet even praised him for his calm attitude, but at least it is liquid.

    Wayne just commented it was getting warm inside, I am quite comfy, so he took off his heavy sweatshirt and is wearing a short sleeved t-shirt. We shall see how this progresses ---- there are three thermometers in the living room so it is either 68, 70, or 74 F. LOL!

    The s-rib recipe looks good Michelle. What about over rice or over pasta? Wow on the girls having a game an 1.5 hours away and in wet cold weather. Yuk. You'll love 'This is Us' ... I didn't have much interest either and so glad my friend told me to watch it. Now I'm hooked.

    Well that's good news Karen to hear Mel is feeling better. Yikes on the bare cupboards. Hope tomorrow's weather lets you out to get groceries.

    I think a pomegranate is a fruit if I am not mistaken, Karen. I have never cooked it only put it in salads or on ice cream. I have some pomegranate balsamic vinegar that I have cooked with it is nice on chicken as it is sort of sweet and tart at the same time. Good news to hear Mel is getting much better.

    Linda, I'm out of fresh stuff only - still have frozen. And some canned. And lots of pasta - rice etc. No bare cupboards. So we don't have to live off the land in the winter - ha ha.

    Sunday we really need to stop by the restaurant in Houston that sells grass fed beef. I am down to one package. At $5 a pound it is not cheap, but so much better for us.

    Electric bill was $495 last month - and that was with using the wood stove! I dread thinking what it would have been without it, since we have electric heat.

    Have a bacon, cheese burger tater tot casserole in the oven. Haven't made in YEARS! Was talking to my niece in Michigan the other night and she had just made one. Just sounded sooo good! When I told hubs I was doing that tonight his face lit up like a kid at Christmas, lol. Might not be the healthiest thing to eat but hey!

    Hope all enjoy their evening.

    Hi Everyone! I did have a fun day at the Flower Shop thanks! :) We had 1400 roses to de-thorn and we actually got them all done today so I she doesn't need me tomorrow afterall. There were 7 of us in there and three of us 'stripping' roses. I really love working there on occasion. It's nice working with flowers and it smells heavenly. She had two cool types of roses this year. Some extra,extra long ones, 80 cm/30 1/2" and then some dyed roses called "Rainbow Roses" where each petal is a different colour. Something new this year. The ladies were thrilled with the jello shots. :)

    We cooked up the roast again when I got home and it was perfect. My gravy turned out very nicely too so that was great.

    I watched "This is Us" a couple of times Linda and really enjoyed it but Jim didn't. :( The jello shots set up perfectly. They looks pretty cute with the hot lip candy on the top. :) Neat on the pretty rain yesterday. :) Pleased to hear your Dr.'s appointment went well.
    Den's being very productive on his holiday Joce!

    Those ribs look decadent Michelle! Dahlia had made them previously and her photo was fabulous.

    Glad to hear Mel is continuing to feel better Karen.

    Our Hydro bill was $319 (Canadian) last month Karen. It's our Hot Tub that is the major culprit as we use the pellet stove and the fireplace for our main source of heat.

    It's no wonder you're tired Kimmer. You've had a lot on your plate recently. Try get a really good sleep and that will do wonders. You don't want to get sick!!! Your casserole sounds like awesome comfort food and very yummy.

    I almost hit a deer head on on the way home tonight. I was going 80 km/hr. up a hill and right at the crest of the hill was a huge deer right in front of the car. I know they are usually up a bit farther near the intersection, but I've never seen one right at the crest. Scared the you know what out of me. I swear it was literally 6 ft. in front of me and I had to veer left to get around it. Thank heavens there wasn't a car coming from the other direction and that the roads weren't icy. Heart almost jumped out of my chest. I blared the horn and it got off the road. Scary!!!!!
