Sunny Saturday!

    Well,no cooking for me today and very little all week. Off to the Cape in a few hours for the week. If I don't catch you before I go,have a good week. Will probably pop in,will have laptop but have to go to the office area to connect.

    2 (14.5 ounce) cans Italian-style diced tomatoes
    1 (19 ounce) can cannellini beans, drained and rinsed
    10 ounces fresh spinach, washed and chopped
    10 ounces penne pasta
    1/2 cup crumbled feta cheese

    Cook the pasta in a large pot of boiling salted water until al dente. Meanwhile, combine tomatoes and beans in a large non-stick skillet. Bring to a boil over medium high heat. Reduce heat, and simmer 10 minutes.

    Add spinach to the sauce; cook for 2 minutes or until spinach wilts, stirring constantly. Serve sauce over pasta, and sprinkle with feta.

    This is the side dish for the little chicken mignons for tonight's supper. I hope it pleases the resident dissenter. And I'll have the bonus leftovers for lunches. Yeah!!!

    I love breakfast for dinner, Wynne! Haven't done it in ages! Doubt I could pull it off tonight either, since Brad had eggs, hashbrowns, and sausage for breakfast!

    I'm wanting something "different" for dinner tonight, but it hasn't hit me yet.... Probably something with chicken though...

    LOL Donna. "Chicken Something"...one time we kept going on in this group about how every night someone was having "Chicken Something"....I got in mad scientist mode and created "ol mother hubbard's tex mex chicken something" lol I'd forgotten all about it! And I think we really liked it...I'm gonna have to look around myposts for it so I can make it again. LOL

    I'm giong to fix Pleclare's pork tenderloin, Goldenherb Crsuted, or something. I forget the exact name, but I've already posted it to the group. Couldn't remember the name for a whole 5 minutes though...CRAFT is upon us. Think I will do some rasted veggies: potatoes, onion, red pepper, and carrots with some lemon/basil/ stuff and some steamed broccoli with parmesan. Hoefully that will be healthy enough. : )

    And now to rest the old lady hip a while. That cold wind and rian at Lowe's didn't make it feel all that wonderful. One day it will be all better...one day soon! : )

    Fred liked the pasta and beans. It wasn''t spicy. Yeah! The feta cheese was just enough salt to send my thirst in overdrive. Good grief, I've drunk gallons of water in the last four days. Which reminds me I need to buy some TP quick. LOL TMI

    Cool trip....I loved it when Liv played with the youth symphony. I just asked her today if she wanted to sell her flute and skating costumes and you would have thought I asked her to cut off a toe. She hasn't played for any length of time in years. Except she did try to learn Peer Gynt for me for Mother's day two years ago.

    Hip surgery? Lori, where did I miss that message. God bless you girl.

    LOL Chicken something....we always seem to have that here regularly.

    Yeah, I agree on the no warm soup thing. I've had a couple of teeth pulled and I believe that is one of the instructions...nothing warm or hot. He sure doesn't want to end up with a dry socket. So NO SMOKING either! No sipping through straws....

I went to a bridal shower and am still totally stuffed. they started with fried Calameri, then they had hot foccacia bread with dipping oil. a salad that they actually made a dish out of cucumber. then pasta, the main course was chicken with spinach and scalloped potatoes. THEN they had this Molten chocolate cake thing with vanilla Ice cream also served with a piece of vanilla cake. I stopped there! but they had a dessert table that was 15 feet long with italian cookies and pasteries. I can't see my feet!! just kidding

Don't want to wait til mid July when she gets back because of Hil moving to Nashville in August, but don't know if I can get it together that quick.
