Getting rid of the Gaminess

    I've been told in the past that you can marinate gamey venison in buttermilk or something to get rid of some of the odd "bite". Has anyone tried this? How long do you marinate? What other things can you marinate gamey meat in? We have one deer in the freezer that has a little more "bite" than I'd like. Thanks for any comments

    bag and cover with 2 cups milk. Allow to marinate for at least 4 hours in the
    refrigerator. Drain meat and pat dry before continuing recipe.

    marinating your deer steaks in Italian dressing works too. Works even better if you have a vacuum sealer to put the meat and marinade in.

    A good processing can really help remove any gaminess. If your steaks or chops have any shiny or white filmy material on them, you're going to get that nasty taste. My hunting party processes our own deer from start to finish. It's not hard to do and if your cutters are good you shouldn't need to worry about the gamey flavor.
