You are right, the beer is a very good rising agent and gives a nice tang to the bread as well.

I don't have any self-rising flour though -- I already have about six different types of flour in my pantry (all-purpose, whole wheat, rye, semolina, etc.) so I am not likely to have (nor to have the room for) a convenience product like that. From what I've been able to read from places like Cook's Illustrated for every one cup of flour (preferably cake flour, but all-purpose works too) you add 1 1/2 teaspoons baking powder and 1/2 teaspoon salt. Have you had any luck with this?

I haven't tried adding baking powder and salt to all-purpose flour but I will. I don't see why it wouldn't work. It'll keep me from keeping 1 less thing in my pantry. I also keep a stocked pantry. I do love this recipe because it is so simple and quick. With 3 kids, food goes quickly in my home.
