Pepper Jack Chicken

PEPPER JACK CHICKEN This recipe came from an estate sale. I obtained it when I purchased the family collection from the Ellis Estate in Ennis, Texas in 1994.
Ingredients
- 2 whole chicken breasts split boned and skinned shopping list
- 1/2 teaspoon garlic salt shopping list
- 1 teaspoon freshly ground black pepper shopping list
- 1/4 cup plus 2 tablespoons melted butter shopping list
- 4 slices spanish onion separated into rings shopping list
- 20 large fresh mushrooms sliced shopping list
- 2/3 cup dry sherry divided shopping list
- 2/3 cup sour cream shopping list
- 1-1/2 cups shredded pepper jack cheese shopping list
- 2 tablespoons chopped fresh jalapenos shopping list
How to make it
- Sprinkle chicken with garlic salt and pepper then sauté in butter in large skillet until golden.
- Transfer chicken to a broiler proof serving dish reserving drippings in skillet.
- Sauté onion in drippings until transparent then add mushrooms and sauté 5 minutes.
- Remove from heat then add 1/3 cup sherry, sour cream and cheese then stir until cheese melts.
- Add sherry and mix well then spoon sauce over chicken.
- Broil 3" from broiler element until sauce just begins to brown.
- Sprinkle with chopped jalapenos and serve immediately.
