Banana Colada Pudding

BANANA COLADA PUDDING This recipe came from an estate sale. I obtained it when I purchased the family collection from the Ellis Estate in Ennis, Texas in 1994.
Ingredients
- 1 tablespoon plus 1 teaspoon unflavored gelatin divided shopping list
- 3/4 cup palm sugar shopping list
- 1 cup pineapple juice shopping list
- 2 teaspoons vanilla extract shopping list
- 1 cup coconut milk shopping list
- 3 large ripe bananas shopping list
How to make it
- In saucepan combine 1 tablespoon gelatin, sugar and pineapple juice.
- Stir over medium heat until sugar is dissolved.
- Mash bananas and add to saucepan.
- Whip coconut milk and 1 teaspoon gelatin for 1 minute then add to sugar banana mixture.
- Pour into shallow ceramic bowls and chill thoroughly.
