How to make it

  • Peel, and thinly slice zucchini.
  • Warm oil in skillet over medium heat, add zucchini.
  • Season to taste after the zucchini begins to soften.
  • Cook until translucent, or desired firmness.

    This recipe serves as a fresh reminder that a little olive oil can bring out the best in food. I omitted the garlic because I was going for a simple taste. It really didn’t need it. All it needed was a quick shake with salt ‘n pepper and this most basic and simple dish was bursting with natural flavor.

    I do these too! I add onion and parmesan on the tops when they've cooked through. And garlic salt. Ahhh. so good.
