I'm having the best Fall garden ever! My zucchini plant is usually gone by this time, but this year I'm giving it away left and right and still have more than I can use. We like just plain and simple vegetables to go along with our meal. Normally I just steam them, but this recipe Fried Zucchini from "Snooklyukums" reminded me that cooking in olive oil brings out the best in everything. Here's my review:

"This recipe serves as a fresh reminder that a little olive oil can bring out the best in food. I omitted the garlic because I was going for a simple taste. It really didn’t need it. All it needed was a quick shake with salt ‘n pepper and this most basic and simple dish was bursting with natural flavor.

Sometimes simple recipes are the best! I love zucchini! Over the past few years, I've even gotten my hubby to eat it. And like it! He says he's always liked it and I would just never let him have it before - haha!

Bakerme, I can remember when I was younger. Zucchini had to be battered in cracker crumbs and fried in butter before I would eat it. My tastes have changed so much through the years that I wouldn't dream of doing that anymore.
