Apricot Pork Roast Recipe
Delicious fruity pork loin done in a slow cooker. Simple and Delicious!

Ingredients
  • 1 boneless whole pork loin roast (2 to 3 lbs)
  • 1 jar (12 oz) apricot preserves
  • 1 c vegetable broth
  • 2 Tbs cornstarch
  • 1/4 c cold water

Directions
  1. Place roast in a 3 qt. slow cooker. In a small bowl,combine preservesa and broth;pour over roast. Cover and cook on low for 6 to 7 hours or till meat reads 160.
  2. Remove meat to a serving platter;keep warm. Skim fat from cooking juices;transfer to small saucepan. Bring liquid to a boil. Combine cornstarch and water till smooth. Gradually stir into pan.
  3. Bring to a boil;cook and stir 2 mins or till thickened. Serve with pork.
