Ingredients
  • 6 C shredded or grated zucchini--no rind of course
  • 6 C sugar--(i reduce mine to 5 with no flavor loss)
  • 1/2 C lemon juice
  • 1 C crushed pineapple w juice
  • 2 small boxes of jello---any flavor you like

Directions
  1. Boil zucchini with 1 cup of water--until clear --about 5--6 mins
  2. add the sugar, lemon juice and crushed pineapple --
  3. boil for another 8 min.
  4. remove from heat and add the jello--stir until completely dissolved.
  5. process in jelly jars or in freezer containers-
  6. ****NOTE---i divide my batch in 1/2 so i make 2 differant kinds of jam.!!!
  7. i have made apricot , strawberry, pineapple(is fabulous), peach(awesome!) and raspberry....all turning out just great

This is a great recipe.. I have made jams before using jello and they turn out very good..

Thank you thank you !! for all your comments--i made a batch of strawberry and put in several small containers for all the folks i work with to sample--they were all just shocked that it was zucchini! i have been making this for years !!
