Ingredients
  • 3 regular onions (I use red onions - sweeter)
  • 2 x 330ml good quality bottle beer
  • oil for cooking (rice bran or olive)

Directions
  1. Chop onions (halve then slice thinly)
  2. add onions to warm BBQ griddle plate (you can use a skillet or frying pan, just add a little oil)
  3. Keep stirring the onions every now and again while chatting to friends.
  4. As the onions caramelise with the heat, you'll need to keep adding just a splash of beer, then stir again.
  5. Keep repeating the addition of beer and the stirring. It evaporates and needs refreshing.
  6. You'll need around 1 bottle to get the onions done, the other one helps the conversation with friends.
  7. If you are a bit funny and don't drink beer, use a mix of apple juice and veggie stock instead, but the results aren't the same, I'm sorry to say.
