The classic bran muffin, stretched and modernized with fresh blueberries and Sultana raisins, sweetened with sugar sub for diabetics. Versatile, and can be normally sweetened with brown sugar!

Ingredients
  • 2 1/2 cups whole wheat flour
  • 1 1/2 cups white all-purpose flour
  • 2 1/2 tsp baking soda
  • 2 tsp baking powder
  • 1/2 cup packed brown sugar (OR sugar substitute for diabetics)
  • 1/2 tsp salt
  • 1 tsp vanilla
  • 1/2 cup canola oil
  • 6 whole eggs
  • 1 cup Sultana raisins
  • 1 pint blueberries
  • 1 1/2 cups bran
  • 2 1/2 cups water

Directions
  1. Combine all dry ingredients well
  2. add blueberries and raisins; combine well
  3. add eggs and oil
  4. add the water
  5. Stir until all is well mixed
  6. preheat oven at 350*F
  7. prepare muffin pans with cooking spray
  8. fill each section of pans at least 2/3 full
  9. Bake for 15v minutes, or until golden brown
  10. Served hot or cold, these make an excellent snack. or a great side with breakfast :+D
