How to make it

  • Bring Zucchini; onion, spices and liquid to a low boil reduce heat
  • Add potatoes, and broccoli, cook until tender
  • Add Velveeta, stir until melted
  • Add potato flakes until desired thickness.
  • Serve with bread!

    Have you tried several Zucchini's with a couple large chopped sweet onion and slices of polish sausage all simmered together. It's wonderful over rice. Enjoy! ;0)

    You're a Hoot-and-a-half, Mark. Luv zukes. Copied & saved. Have you tried zuke pancakes (w sour cream & applesauce), or a zuke fritatta (w shrooms, & lotsa cheese), zuke pizza? Good stuff. If you need s'more ideas, I'll rummage thru my recipes.

    I have missed your posts!

    Besides pulverizing it and using it for perfume..I don't know what to tell ya'.

    When I started to put it in pancakes for breakfast years ago...that's when the kids planned their escape.
