French Onion Soup Recipe


FRENCH ONION SOUP Recipe
fresh,healthy and simple onion soup

Ingredients
  • 3 lbs onions peeled and sliced
  • 2 cloves of garlic peeled and finely minced
  • 4 oz unsalted butter
  • 1 tablespoon olive oil
  • 2 bay leaves and 2 sprigs thyme tied together
  • 31/4 pints fresh beef stock
  • 1 teaspoon brandy
  • 2 glasses white wine
  • 1 baquette sliced at an angle
  • 8-10 oz grated gruyere cheese
  • fresh gorund baclk pepper
  • 1 teaspoon sea salt

Directions
  1. heat butter and olive in saucepan with heavy bottom. when melted add onions,pepper,salt and bayleaf and thyme,stir. gently cook over low heat for about 20 minutes, stir every few minutes order avoid onions getting burnt.. uncover add garlic and brandy
  2. and cook for 20-30 mins stirring frequently till carmelized
  3. stir in flour and stir very frequently in order avoid flour gets lumpy
  4. and cook for further 3 minutes till mixed thoroughly with onions
  5. pour wine and stock ,bring to boil...and simmer for 25 minutes.
  6. remove bay leafe and thyme sprigs.
  7. toast the baquette slices. put a heap of cheese on top of each and place a center of cour dish and ladle the hot and heart soup on top
  8. and thats it.......................bon appetit
