Telichtaria is a spicy pork dish served with rice or boiled potatoes, telichtaria means little rolls.

Ingredients
  • 1 kg ground pork.
  • 10 thin slices pork schnitzel.
  • 1 c milk.
  • rind of 1 lemon shredded.
  • 2 tbs bread crumbs.
  • 4 tbs parmesan shredded ( or any other hard sharp cheese will do ).
  • 2 eggs.
  • 1/2 ts ground cloves.
  • 1/4 ts ground nutmeg.
  • 10 thin slices ham chopped.
  • 2 tbs unsalted butter.
  • 2 tbs olive oil.
  • 250 ml white whine or beef broth.
  • juice of 1 lemon.
  • salt and pepper to taste.

Directions
  1. Put ground meat, milk, lemon rind, bread crumbs, cheese, spices, ham, the slightly beaten eggs, pepper and salt to taste in a big bowl.
  2. Knead for 10 min till everything has been well mixed.
  3. Let rest for 15 min on room temperature.
  4. Mould 10 croquettes and put 1 in the middle of each schnitzel and roll them and fix with 2 toothpicks.
  5. Heat butter and oil in a deep frying pan and bake the rolls on each side for 2 minutes.
  6. Add the whine/broth and lemon juice and cook on medium heat for 12 - 15 minutes.
  7. Serve with rice andd a green salad.
