How to make it

  • Melt butter in large non-stick saucepan;add garlic,onion and celery. Cook over med-high heat 5 to 7 mins. Stir in mushrooms and cook 6 to 8 mins. Sprinkle with flour and stir;cook 1 min.
  • Add sherry and vegetable broth. Bring to boil,then reduce to simmer. Cook 25 mins.
  • Cool slightly and puree in batches with hand held food processor or blender. Return to pot,simmer gently. Add heavy cream;heat through. Season with salt and black pepper. Garnishwith chives and nutmeg , if desired. Family Circle

    I've never made my own cream of mushroom soup - I'm sure it's a heck of a lot better than the big C's condensed version! ;')
