Cream of Mushroom Soup

- 1 Tbs butter shopping list
- 2 cloves garlic,chopped shopping list
- 1 c onion,chopped shopping list
- 1/2 c celery,chopped shopping list
- 8 c mushrooms,trimmed and quartered shopping list
- 1/4 c flour shopping list
- 1/4 c sherry shopping list
- 6 c vegetable broth shopping list
- 3/4 c heavy cream shopping list
- 1 tsp. salt shopping list
- 1/4 tsp pepper shopping list
- chives,1/4 tsp nutmeg for garnish shopping list
How to make it
- Melt butter in large non-stick saucepan;add garlic,onion and celery. Cook over med-high heat 5 to 7 mins. Stir in mushrooms and cook 6 to 8 mins. Sprinkle with flour and stir;cook 1 min.
- Add sherry and vegetable broth. Bring to boil,then reduce to simmer. Cook 25 mins.
- Cool slightly and puree in batches with hand held food processor or blender. Return to pot,simmer gently. Add heavy cream;heat through. Season with salt and black pepper. Garnishwith chives and nutmeg , if desired. Family Circle

I've never made my own cream of mushroom soup - I'm sure it's a heck of a lot better than the big C's condensed version! ;')
