Spicy Island Hot Sauce

- 1 papaya* coarsely chopped shopping list
- 1 medium onion coarsely chopped shopping list
- 2 medium garlic cloves minced shopping list
- 4 habanero peppers* stemed and seeded shopping list
- 1 inch ginger root chopped shopping list
- 1/3 cup dark rum shopping list
- 1/3 cup fresh lime juice shopping list
- 1/2 teaspoon salt shopping list
- 2 1/2 teaspoons honey shopping list
- 1/8 teaspoon cardamom shopping list
- 1/8 teaspoon anise seed shopping list
- 1/8 teaspoon clove shopping list
- 1/8 teaspoon turmeric shopping list
- 1 pinch nutmeg shopping list
- 1 pinch cinnamon shopping list
- black pepper shopping list
How to make it
- Combine all ingredients in blender and puree just until smooth, or about 1 minute (taking care not to overblend and aerate). Pour into a saucepan and bring to a boil, then simmer gently, uncovered,for 10 minutes. Remove from heat and allow to cool before bottling. Refrigerated, the sauce will keep approximatly 6 weeks. Makes 2 cups.
