Super Crusty Char Grilled Steaks Recipe
From The Week magazine, how to tips to gtrill that steak just like a restaurant. Until I read the article, I never knew the secrets that help achieve a super char crust on steaks.

Ingredients
  • 1 tsp salt
  • 1 tsp cornstarch
  • 4 strip, rib eye or tenderloin steaks about 1 1/2 inches thick
  • Pepper
  • Classic steak Sauce: ( optional )
  • 1/3 cup raisins
  • 1/2 cup boiling water
  • 1/4 cup ketsup
  • 3 Tbs worchestershire sauce
  • 2 Tbs Dijon mustard
  • 2 Tbs white vinegar
  • salt and pepper

Directions
  1. Chill the steaks
  2. mix salt and cornstarch together
  3. Pat steaks dry with paper towel and rub in salt and cornstarch mixture
  4. Arrange steaks on a wire rack placed on a baking sheet
  5. FREEZE STEAKS, 30 minutes up to 1 hour
  6. Grill steaks right from the freezer
  7. Season with pepper
  8. Grill covered over a hot fire until they are well browned and cooked, about 4 to 8 minutes per side
  9. Transfer to a plate
  10. Tent with foil
  11. let rest 5 minutes before serving
  12. Optional steak sauce: ( just like the bottled classic kind )
  13. Combine raisins in the boiling water and let sit 5 minutes until fully plumped
  14. Puree raisin mixture with remaining ingredients and blend until smooth
  15. Season with salt and pepper
  16. Makes 1 1/4 cups of steak sauce
  17. Note: raisins may seem unusual but add just enough sweetness to the sauce

I'm definitely going to try this. I guess with the crust, you can add herbs and spices as you wish.
