How to make it

  • In a 4-quart saucepan, heat oil and add onions, celery, bell pepper, and garlic and cook , stirring frequently, until vegetables are tender.
  • Stir in reserved tomato liquid along with remaining ingredients, except shrimp, parsley,and rice.
  • Bring mixture to a boil.
  • Reduce heat to low and simmer for 30 to 35 minutes.
  • Stir in shrimp and 2 Tbsp parsley and continue cooking until shrimp turn pink, about 5 minutes.
  • Remove and discard bay leaf.
  • Arrange hot rice on platter and top with shrimp mixture.
  • Garnish with remaining parsley.

    Sometimes all you need is simple ingredients to make a light and very tasty dish. In fact this is more true to the real creole dish than the creamy, buttery kicked up dishes I post. As it would have been hard for the first settlers to get these ingredients from the swamps.\0
