Shrimp Creole

- 2 tsp vegetable oil shopping list
- 1/2 cup sliced onion shopping list
- 1/4 cup each sliced celery and red or green bell pepper shopping list
- 1 small clove garlic, minced shopping list
- 4 cups canned whole tomatoes (with liquid); drain and chop tomatoes, reserving liquid shopping list
- 1 Tbsp each tomato paste and worcestershire sauce shopping list
- 2 tsp chili powder shopping list
- 1 tsp salt shopping list
- 1/4 to 1/2 tsp crushed red pepper flakes shopping list
- 1/4 tsp oregano shopping list
- 1 bay leaf shopping list
- 15 oz shelled and deveined shrimp shopping list
- 1/4 cup chopped Italian parsley, divided shopping list
- 2 cups cooked long grain rice shopping list
How to make it
- In a 4-quart saucepan, heat oil and add onions, celery, bell pepper, and garlic and cook , stirring frequently, until vegetables are tender.
- Stir in reserved tomato liquid along with remaining ingredients, except shrimp, parsley,and rice.
- Bring mixture to a boil.
- Reduce heat to low and simmer for 30 to 35 minutes.
- Stir in shrimp and 2 Tbsp parsley and continue cooking until shrimp turn pink, about 5 minutes.
- Remove and discard bay leaf.
- Arrange hot rice on platter and top with shrimp mixture.
- Garnish with remaining parsley.
