How to make it

  • Preheat grill to medium-high.
  • Chipotle Ketchup: Whisk ketchup, chipotle chiles, honey, and 1 tablespoon lime juice. Set aside.
  • Guacamole: Coarsely mash all ingredients together for the guacamole; cover with plastic wrap, pressing plastic wrap onto surface of guacamole (prevents browning), and chill.
  • Turkey Burgers: Blend turkey, oil, and seasonings in a large bowl. Pulse chiles, shredded cheese, and beans in a food processor until coarsely chopped; add to turkey. Blend, shape into 4 patties, then coat both sides of each patty with nonstick spray. Grill until cooked through, about 4 minutes per side; top burgers with cheese slices during the last minute of grilling.
  • To assemble burgers, spread guacamole onto bottom of bun. Sprinkle with chopped tomato, top with a burger, chipotle ketchup, and onion slices; place bun top. Serve with Spicy Tortilla Chips
  • Spicy Tortilla Chips: Preheat oven to 400 degrees F. Combine 1 tsp. kosher salt, 1 tsp. chili powder, 1/2 tsp. ground cumin, and 1/2 tsp. cayenne. Spread 6 oz. tortilla chips on baking sheet and sprinkle with seasoning mixture. Bake 5 minutes.
