Southwestern Turkey Burgers

- Chipotle Ketchup: shopping list
- 1/2 c. ketchup shopping list
- 2 TBSP. chipotles in adobo, chopped shopping list
- 1 TBSP. honey shopping list
- 2 tsp. fresh lime juice shopping list
- Guacamole: shopping list
- 2 avocados, peeled, pitted, and chopped shopping list
- 2 TBSP. sour cream shopping list
- 1 TBSP. fresh lime juice shopping list

- turkey Burgers: shopping list
- 1 1/4 lb. ground turkey breast shopping list
- 1 TBSP. olive oil shopping list
- 1 tsp. kosher salt shopping list
- 1 tsp. dried oregano shopping list
- 1/2 tsp. ground black pepper shopping list
- 1/4 tsp. ground cumin shopping list
- 1/4 tsp. ground coriander shopping list
- 1 - 4.5 oz. can whole green chiles shopping list
- 1/2 c. monterey jack cheese, shredded shopping list
- 1/2 c. canned black beans, drained and rinsed shopping list
- 4 slices monterey jack cheese shopping list
- 4 hamburger buns, split and toasted shopping list
- 1/2 c. tomato, chopped shopping list
- 4 slices red onion, 1/4" thick shopping list
- Spicy tortilla chips, recipe follows shopping list
How to make it
- Preheat grill to medium-high.
- Chipotle Ketchup: Whisk ketchup, chipotle chiles, honey, and 1 tablespoon lime juice. Set aside.
- Guacamole: Coarsely mash all ingredients together for the guacamole; cover with plastic wrap, pressing plastic wrap onto surface of guacamole (prevents browning), and chill.
- Turkey Burgers: Blend turkey, oil, and seasonings in a large bowl. Pulse chiles, shredded cheese, and beans in a food processor until coarsely chopped; add to turkey. Blend, shape into 4 patties, then coat both sides of each patty with nonstick spray. Grill until cooked through, about 4 minutes per side; top burgers with cheese slices during the last minute of grilling.
- To assemble burgers, spread guacamole onto bottom of bun. Sprinkle with chopped tomato, top with a burger, chipotle ketchup, and onion slices; place bun top. Serve with Spicy Tortilla Chips
- Spicy Tortilla Chips: Preheat oven to 400 degrees F. Combine 1 tsp. kosher salt, 1 tsp. chili powder, 1/2 tsp. ground cumin, and 1/2 tsp. cayenne. Spread 6 oz. tortilla chips on baking sheet and sprinkle with seasoning mixture. Bake 5 minutes.
