How to make it

  • Cook the sausage and finely chopped onion until well done and very fine, no large coarse bits.
  • Scramble the eggs very light and fine, seasoned as you like, but I omit the salt with the sausage in the mix.
  • Add the sausage to the eggs and mix well.
  • Cheese to follow suit!
  • ~
  • You will need a very sharp knife or one of those tomato end removers that you can get from a restaurant supply store. This is what I use.
  • Scoop out the end of the tomato and hollow it out. So now you have cherry tomato shells.
  • Fill these shells with the egg / sausage / cheese mixture.
  • Top with fresh grated cheese.
  • Serve right away!!!!
