Mexican Skillet Beef This recipe came from an estate sale. I obtained it when I purchased the family collection from the Marcus Estate in Greenville, Texas in 1994.

Ingredients
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 4 beef cutlets
  • 1 tablespoon vegetable oil
  • 1 cup frozen corn
  • 1/3 cup chunky salsa
  • 2 tablespoons chopped fresh cilantro
  • 1 large tomato chopped
  • 15 ounce can black beans rinsed and drained

Directions
  1. Mix chili powder, salt and pepper then sprinkle evenly over both sides of beef.
  2. Heat oil in skillet over medium high heat then cook beef in oil 10 minutes.
  3. Stir in remaining ingredients then heat to boiling and reduce heat.
  4. Cover and simmer 5 minutes then serve immediately.
