- 1 small carrot scraped and cut into tiny pieces shopping list
- 1 small rib celery, diced shopping list
- 1 small onion, diced shopping list
- 3 T butter shopping list
- 1/4 C flour shopping list
- 2 c low sodium chicken broth shopping list
- 2 C low sodium beef broth shopping list
- 1 bay leaf shopping list
- 1/4 t dried thyme shopping list
- 5 whole peppercorns shopping list
- salt to taste shopping list
How to make it
- heat butter in large saucepan, when foaming subsides,add veggies and cook ,stirring often till softened and browned. 7 min.
- reduce heat to med, stir in flour, stir constantly, until browned and fragrant about 5 min
- whisking constantly add both broths.
- boil gently, skimmimg any foam.
- reduce heat to med-low, add bay leaf, thyme, and peppercorns. simmer,stirring occasionaly, for about 20-25 min until thick and reduced to 3 Cups.
- strain thru a fine- mesh strainer.pressing to get all liquid.
- adjust seasonings
