this gravy is good. plus, it can be put on any meat, beef, chicken.I make double, and freeze in containers.

Ingredients
  • 1 small carrot scraped and cut into tiny pieces
  • 1 small rib celery, diced
  • 1 small onion, diced
  • 3 T butter
  • 1/4 C flour
  • 2 c low sodium chicken broth
  • 2 C low sodium beef broth
  • 1 bay leaf
  • 1/4 t dried thyme
  • 5 whole peppercorns
  • salt to taste

Directions
  1. heat butter in large saucepan, when foaming subsides,add veggies and cook ,stirring often till softened and browned. 7 min.
  2. reduce heat to med, stir in flour, stir constantly, until browned and fragrant about 5 min
  3. whisking constantly add both broths.
  4. boil gently, skimmimg any foam.
  5. reduce heat to med-low, add bay leaf, thyme, and peppercorns. simmer,stirring occasionaly, for about 20-25 min until thick and reduced to 3 Cups.
  6. strain thru a fine- mesh strainer.pressing to get all liquid.
  7. adjust seasonings
