How to make it

  • heat butter in large saucepan, when foaming subsides,add veggies and cook ,stirring often till softened and browned. 7 min.
  • reduce heat to med, stir in flour, stir constantly, until browned and fragrant about 5 min
  • whisking constantly add both broths.
  • boil gently, skimmimg any foam.
  • reduce heat to med-low, add bay leaf, thyme, and peppercorns. simmer,stirring occasionaly, for about 20-25 min until thick and reduced to 3 Cups.
  • strain thru a fine- mesh strainer.pressing to get all liquid.
  • adjust seasonings
