Ingredients
  • 12 ounces evaporated milk
  • 4 medium ripe bananas mashed
  • 3 beaten eggs
  • 1/2 cup granulated sugar
  • 1 tablespoon vanilla
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon almond extract
  • 2 large croissants cut or torn into 1" pieces
  • 1/4 cup packed brown sugar
  • 2 tablespoons all purpose flour
  • 1 tablespoon butter melted
  • 1 teaspoon ground cinnamon
  • 1/2 cup chopped pecans
  • Whipped cream or ice cream

Directions
  1. Lightly grease a rectangular baking dish then set aside.
  2. Stir together evaporated milk, banana, eggs, granulated sugar, vanilla, cinnamon and extract.
  3. Place croissant pieces in prepared baking dish.
  4. Pour egg mixture evenly over croissants pressing pieces down to be sure they are all moistened.
  5. Combine brown sugar, flour, melted butter and 1 teaspoon cinnamon then stir in pecans.
  6. Sprinkle over croissant mixture then bake at 350 for 45 minutes.
  7. Let stand 30 minutes then serve warm topped with whipped cream or ice cream.
