Herbed Pork Roast

- 2 Tbs olive oil shopping list
- 1 Tbs each finely chopped fresh oregano,sage and/or rosemary shopping list
- 2 cloves garlic,peeled and finely chopped shopping list
- 1/8 tsp red pepper flakes shopping list
- 1 bone-in pork loin roast (about 5 lbs) shopping list
How to make it
- Heat oven to 450. In small bowl, combine olive oil,oregano,sage,rosemary,garlic and red pepper flakes;stir till blended. Season with 1 tsp salt,if desired.
- Rub herb-garlic mixture evenly over entire surface of pork loin. Place pork bone side down in roasting pan. Roast 10 mins.
- Reduce oven temperature to 300 degrees. Roast 1-1/2 hours or till thermometer inserted in meat reads 165. Let sit 10 mins before slicing.

Mmmmm I just bought a 4-pack of pork sirloin tip roasts, but they are boneless and just under 2 lbs. I suppose I could use this spice mixture on it though. Sounds good!
