Shortbread The Irish - Scottish Way Recipe
My Mother sometimes used this recipe. She liked to cut slivers of candied red and green cherries for the top. She didn't believe in being typical and loved altering recipes.

Ingredients
  • 1 cup butter at room temperature
  • 1/2 cup caster sugar - superfine or baking sugar
  • 1 cup all-purpose flour
  • 1/4 cup cornstarch
  • Makes 1 round or you can make individual cookies.

Directions
  1. Preheat oven to 300 degrees.
  2. Cream butter and sugar.
  3. Add flour and cornstarch.
  4. Roll out and cut into squares or rounds.
  5. Bake on a cookie sheet in a slow 300 degree oven until lightly golden.
  6. Baking time depends on your oven and altitude so keep a close watch on it.
