Garbanzo Pasta Recipe


GARBANZO PASTA Recipe
A delicious, protien-rich vegetarian pasta dish.

Ingredients
  • 1 tbsp olive oil
  • 1 can chickpeas, drained
  • 1 tsp minced garlic
  • 1 tsp dill
  • 1/8 tsp red pepper flakes
  • 1 can (14oz) diced tomatoes
  • 2 cups pasta shells
  • 1 small broccoli, chopped
  • 1/4 cup grated romano cheese

Directions
  1. In a sauce pan, heat oil.
  2. Add chickpeas and spices.
  3. Cook until chickpeas turn golden.
  4. Add tomatoes with juice and simmer 5 minutes.
  5. Cook pasta according to directions.
  6. Add broccoli 2 minutes before pasta is done.
  7. Drain, but reserve 2/3 cup of the cooking liquid.
  8. Return pasta & broccoli to pot.
  9. Add chickpea mixture and cooking water.
  10. Serve with grated cheese.
