Texas Applesauce Cupcakes

- 1/2 - cup butter or margarine, soft shopping list
- 3/4 - cup sugar shopping list
- 2 - eggs, lightly beaten shopping list
- 1-2/2 - cups all-purpose flour shopping list
- 2 - teaspoons baking powder shopping list
- 1/4 - teaspoon baking soda shopping list
- 1/4 - teaspoon salt shopping list
- 1-1/2 - teaspoons ground cinnamon shopping list
- 1/2 - teaspoon ground cloves shopping list
- 1 - cup applesauce shopping list
- 1 - cup currants shopping list
How to make it
- Preheat oven to 350°F. Line muffin cups with paper or grease.
- In a large mixing bowl, beat butter and sugar until light.
- Beat in eggs.
- Sift together flour, baking powder, baking soda, salt, cinnamon, and cloves.
- Add into your egg mixture.
- Alternate your applesauce. You want to beat after each addition.
- Stir in currants.
- Now, you want to spoon batter into muffin cups.
- Only fill 2/3's full.
- Bake for 20 minutes or until center spring back when lightly pressed.
- Cook in pan for 5 minutes before you remove to a rack to completely cooled.
- Makes 18 cupcakes
