Simple Strawberry Shortcake Cookies

- 1 moist yellow cake mix, dry shopping list
- 2 eggs shopping list
- 1/3 cup butter, softened shopping list
- 1/8-1/4 cup water* shopping list
- 3/4 cup dried strawberries**, chopped shopping list
- 3/4 cup white chocolate chips shopping list
- Natural strawberry flavored cream cheese, optional shopping list
How to make it
- Combine cake mix, eggs, butter and water and stir until well mixed.
- Add berries and chips and continue to stir until just combined.
- Roll into tablespoonful size balls on baking stone or lightly greased cookie sheet.
- Bake 12-14 minutes at 350 until edges are lightly browned.
- Let cool 5 minutes before removing to cooling rack.
- If desired, spread cookies with thin layer of strawberry cream cheese, after cooled.
- *PLEASE NOTE: add water a bit at a time until the dough is slightly moistened but still stiff enough to "roll" into balls. If the cookies will be expected to sit for a day or more, the berries will continue to moisten the cookies, so a slightly stiffer dough will probably yield a better outcome. The softer cookies are still delicious, but they're so moist, they fall apart, even though they are cooked through. :)
- **Dried strawberries can often be found in the bulk health or organic sections, online, or can be found in many "berry blend" packages. If using a berry blend, I recommend using as many strawberries as you can find in the bag, then cherries, raspberries or cranberries to make 3/4 cup
