Ingredients
  • 3/4 cup maple syrup
  • 1 tbs balsamic vinegar
  • 1 tbs brown sugar
  • 1/2 tsp cinnamon
  • 1/2 cup pecans
  • salt, pepper
  • olive oil
  • 2 green apples cored
  • 1/4 cup finely chopped candied ginger
  • 4, 1 1/2 inch thick pork or lamb chops

Directions
  1. Preheat broiler or grill
  2. In small bowl whisk together the syrup, sugar, vinegar and cinnamon
  3. In saucpan heat 2 Tbs maple syrup mixture, with peans and cook till nuts glazed
  4. Transfer nuts to plate to spread out to cool
  5. Then when cold, rough chop
  6. Season chops well with kosher salt, coarse ground black pepper and drizzle with olive oil
  7. Then broil or grill chops ( 7 minutes per side )
  8. Brush with the remaining maple glaze every 2 to 3 minutes, turning chops frequently to prevent burning
  9. When cooked, let rest 5 minutes before serving
  10. To serve:
  11. slice cored apples into thick rounds, drizzle with some oive oil, season lightly with salt and pepper and broil until tender, turning frequwntly
  12. Serve chops with the apple slices,, sprinkle with the nuts and candied ginger
