Ingredients
  • 6 Cups peeled sliced cucumbers
  • 1 Cup sliced onions ( I used Vadalias)
  • 1 Cup white vinegar
  • 1/2 Cup water
  • 1 1/4 Cups sugar
  • 1 teaspoon pickling salt
  • 1 teaspoon celery seed
  • 1/2 mustard seed
  • 1/4 Cup fresh dill if desired, chopped

Directions
  1. In a large bowl, combine cucumbers and onions. Mix well. In a large saucepan, combine all remaining ingredients except dill. Bring to boil. Stir to dissove sugar. Pour hot mixture over cucumber mixture and mix well. Mix in dill if desired. I put these in a large flat covered container and refridgerate overnight but you can fill sterilized jars and store in fridge as well. Ready to use in 24 hours. Mine don't last long enough to pack in jars and will last in fridge for up to 2 months.
