How to make it

  • First process the crackers in the food processor or blender until crumbled. Melt the butter in the microwave and mix with the crackers. If still too dry you can add a bit more butter but remember it should be too moist. Meanwhile spread some butter all over the form and sprinkle with breadcrumbs (it prevents cake from sticking to the bottom of the pan) or lay with parchment paper. Now evenly spread the dough all over the pan.
  • Separate yolks from the whites and mix yolks with ricotta cheese, melted butter, sugar, potato starch, farina, vanilla puddings, vanilla extract and baking powder. Mix with a big spoon until all ingredients are well combined. Heat the oven to 350°F and beat the egg whites until stiff. Carefully add the beaten egg whites to the cheese mixture and gently but mix everything together. Fill the pan with a cheese mixture and bake 60 min or until the top is lightly browned. Turn off the heat and let leave it in the oven for 10 more minutes or let it cool down completely in the oven. When cool you can sprinkle the top with a powder sugar or spread chocolate icing.

    I agree with Mommyluvs2cook. This is the most unique recipe for Sernik I have ever seen and the ingredients are really interesting. Very different and I like different ;)
