Bittersweet Chocolate Torte With Apricot Filling Recipe

  • Cake:
  • 6 large eggs
  • 3/4 cup, minus 1 Tbsp, granulated sugar
  • 1 tsp vanilla extract
  • 1/2 cup plus 1 Tbsp sifted all-purpose flour
  • 1/2 cup sifted unsweetened cocoa powder
  • 1 tsp ground allspice
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • Frosting and Filling:
  • 1 1/2 cups part-skim ricotta cheese
  • 1/4 cup plus 2 Tbsp unsweetened cocoa powder
  • 2 Tbsp instant espresso powder
  • 3 Tbsp granulated sugar
  • 2 tsp vanilla extract
  • 1/8 tsp salt
  • 3/4 cup apricot all-fruit spread
  • Strawberries, for garnish (optional)

Directions
  1. Preheat oven to350 degrees.
  2. Spray two 8-inch round cake pans with nonstick cooking spray.
  3. In a large bowl, using an electric mixer set at high speed, beat eggs, sugar, and vanilla until thick and tripled in volume, about 7 minutes.
  4. In a medium, bowl, sift together the four, cocoa powder, allspice, cinnamon, and nutmeg.
  5. Using a large rubber spatula, quickly and gently fold the dry ingredients into the egg mixture, until smooth.
  6. Divide the mixture between the two prepared pans.
  7. Bake until a toothpick inserted in the center of cake comes out clean, about 15 minutes.
  8. Cool completely in pans set on wire racks.
  9. to make the frosting, in a food processor or blender, process the ricotta, cocoa powder, espresso powder, sugar, vanilla, and salt until smooth.
  10. Cover and chill the frosting until ready to use.
  11. When the cake is cool, turn it out of the pans.
  12. With a long serrated knife, split each layer in half horizontally and spread the bottom half of each layer with half of the apricot spread.
  13. Carefully replace the top halves.
  14. Spread half of the frosting evenly over the top of one of the filled layers.
  15. Stack the second filled layer on top of the first.
  16. Swirl the remaining frosting evenly over the top of the cake.
  17. Garnish with whole strawberries, if desired.
