Fajita Chicken Chili Recipe

With the winter months approaching us who doesn't love a good hot pot of chili? This chili has chicken and a little Mexican twist to it

Ingredients
- 2 boneless skinless chicken breasts; cooked
- 1 pkg fajita seasoning mix
- 1 cup chicken stock
- 1 can diced tomatoes
- 1 can white kidney beans
- 1 can chilis
- 1 can brown beans.
- 1 green pepper julienne
- 1 large-sized onion
- 1 cup pepperjack cheese; divided
Directions
- Cube cooked chicken and put in a large pot.
- Add next 6 ingredients, bring to a boil and simmer for 10-12 minutes.
- Add pepper and onion.
- (You want the veggies to still have crunch to them when you are eating them.)
- Serve in bowls and top with cheese.
- *Can simmer all day (if you wish), just add liquid as needed

If I can't find Fajita Seasoning Mix, what spices could I add instead? Finding Fajita Seasoning Mix on Top of the Mountain may prove impossible & this sounds too good not to try to make just because I can't find the seasoning mix.
Any ideas will be greatly appreciated. Thank you & you have 5 Forks from me for this yummy dish.

Try using Taco Mix it's very similar and it will give it that Mexican flavour.
