Ingredients
  • 4 sheets of foil large enough to fold up and make a sealed packet.
  • 1 pound of hamburger. (lean)
  • 1 pound of hot sausage such as breakfast sausage (roll) or hot Italian sausage links with skins removed.
  • 1/2 to 1 cup of finely diced onion. or to taste
  • 1/2 to 1 cup of finely diced red,yellow or green bell pepper or to taste.
  • 2 cups of pepper jack cheese or more, enough to cover the patty when you open the foil after baking then recover to let cheese melt.
  • 1 or 2 cans of diced tomatoes with jalapenos enough to cover the hamburger patties such as (Rotel).
  • 12 baby carrots (shredded). Baby carrots are sweeter.
  • 4 TBSPS diced jalapenos fresh or pickled.
  • 4 tsps minced garlic divided or to taste.

Directions
  1. Tear foil sheets large enough to make sealed packets around hamburger patties
  2. Put ground beef,sausage onions bell pepper,jalapenos in large mixing bowl and mix with hands throughly to incorparate all ingredients.
  3. Seperate into 4 patties on seperate sheet of foil.
  4. Put 3 shredded baby carrots on top of each patty.
  5. 1 tsp of garlic on top of carrots
  6. Put diced tomatoes with jalapenos and juice from can evenly over each patty enough to cover carrots and garlic on each patty.
  7. Fold all 4 sides to make a packet,put them on a cookie sheet to prevent spills.
  8. Bake at 350 degrees or until juice runs clear Approx. 1 hour
  9. Serve with baked potato and a dinner salad.
  10. NOTE: save juices from packet to use in stews or beef and noodles or vegetable beef soup.
