Lemon Clove Cookie Sandwiches

- Cookie: shopping list
- 3/4 cup Land O' Lakes butter, softened shopping list
- 3/4 cup powdered sugar shopping list
- 1 egg shopping list
- 1/2 tsp lemon extract shopping list
- 1 2/3 cups all-purpose flour shopping list
- 1/4 tsp ground cloves shopping list
- 1/8 tsp salt shopping list
- Coarse grain sugar shopping list
- Filling: shopping list
- 2 1/2 cups powdered sugar shopping list
- 1/4 cup Land O' Lakes butter, softened shopping list
- 2 Tbsp lemon juice shopping list
- 1/2 tsp lemon extract shopping list
- 1 to 2 Tbsp Land O' Lakes Fat Free Half and Half shopping list
How to make it
- Combine 3/4 cup butter and 3/4 cup powdered sugar in large bowl; beat at medium speed until creamy.
- Add egg and 1/2 tsp lemon extract; continue beating until combined. Reduce speed to low; add flour, cloves and salt.
- Divide dough in half; shape each half into 8-inch log. Wrap each in plastic food wrap and refrigerate until firm (at least 2 hours).
- Heat oven to 350 degrees.
- Cut logs into 1/4-inch slices with a sharp knife.
- Place 1 inch apart onto ungreased cookie sheets.
- Sprinkle half of cookies with coarse grain sugar.
- Bake for 8 to 10 minutes or until edges begin to brown.
- Transfer to wire rack and cool completely.
- Combine all filling ingredients in a medium bowl, adding enough half and half for desired spreading consistency. Beat on low speed until well mixed.
- Spread about 1 tsp of filling on bottom of each cookie that is without the sugar.
- Top with remaining cookie, sugar side up.
