Spinach Salad With Roasted Chicken And Warm Dressing Recipe
SPINACH SALAD WITH ROASTED CHICKEN AND WARM DRESSING This recipe came from an estate sale. I obtained it when I purchased the family collection from the Irvine Estate in Allen, Texas in 1994.

Ingredients
  • 8 cups fresh spinach torn into bite size pieces
  • 6 slices bacon
  • 1 cup cubed roasted chicken
  • 2 medium zucchini cut into julienne strips
  • 1/3 cup chopped green onions
  • Dressing:
  • 1/2 cup water
  • 1/4 cup cider vinegar
  • 1 tablespoon granulated sugar
  • 1 tablespoon all purpose flour
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon celery seed

Directions
  1. Place spinach in large serving bowl.
  2. Cook bacon in skillet over medium high heat until crisp then drain and crumble.
  3. Drain fat from skillet then cook chicken, zucchini and green onions in same skillet 2 minutes.
  4. Stir occasionally until onions are crisp tender then add bacon and chicken mixture to spinach.
  5. For dressing heat water and vinegar in skillet until hot then stir in remaining ingredients.
  6. Cook 1 minute stirring constantly until slightly thickened then pour over salad and toss gently.
