Ingredients
  • 16 OZ Pasta
  • 1LB of Rock shrimp peeled and deviened
  • 1 cup of fish stock
  • 1 cup of white wine
  • 1/2 cup chopped red bell pepper
  • 1/2 cup frozen peas thawed
  • 1/2 cup chopped white onion
  • 12 oz heavy whipping cream
  • 4 tbs fresh grated parmesan cheese
  • 1 tbs butter
  • 2 egg yolks
  • 1 tbs fresh chopped parsely
  • 3 garlic cloves thinly sliced
  • 2 tbs olive oil
  • salt and pepper to taste

Directions
  1. Cook pasta al dente drain and set aside
  2. Pan sear shrimp in one tbs olive oil, 2 cloves of the sliced garlic and fresh thyme. finish with butter, salt and pepper to taste
  3. Heat remaining olive oil in medium saucepan,
  4. Soften red pepper,chopped onion and remaining garlic.
  5. Add stock and white wine and proceed to reduce 2/3rds on med/high heat
  6. Add heavy cream and cheese, stirring continuously add pasta, shrimp and peas saute 2 minutes remove from heat and add egg yolks stir till cream thickens plate garnish with fresh parslely
