Stuffed Breast Of Chicken For One Recipe
This serves one, but can easily be multiplied by however many servings are needed. Being single, I like recipes that make smaller quantities.

Ingredients
  • 1/2 bone in chicken breast
  • 1/4 teaspoon salt
  • 1/8 teaspoon ground black pepper
  • 1 tablespoon onion, chopped
  • 1 teaspoon green bell pepper (I like to use more)
  • 1 tablespoon celery, chopped
  • 1 tablespoon butter
  • 1/8 teaspoon poultry seasoning
  • 1/8 teaspoon fresh parsley, minced (if you happen to have it)
  • hot pepper sauce to taste
  • 1 slice dry whtie bread, crumbled

Directions
  1. Place chicken breast half skin side down on piece of foil.
  2. Sprinkle with salt and pepper.
  3. Combine remaining ingredients.
  4. Place mixture on top of chicken, pressing into rib bones.
  5. Fold over foil to seal.
  6. Place on small baking pan.
  7. Bake at 400 degrees for 35 minutes.
  8. Carefully open foil and bake an additional 5 minutes or until chicken is tender and juices run clear.
