This is an easy chicken pot pie! As a child I called it POCK pie..lol..

Ingredients
  • 1 stick butter
  • 1 chicken or 3 cups left over chicken
  • 3-4 boiled eggs
  • 1 c. self rising flour
  • 1 c. milk
  • 1 can cream celery soup
  • 1 1/2 c. chicken broth

Directions
  1. Boil chicken, cut up and put in the bottom of a shallow casserole dish.
  2. Melt butter and pour over chicken.
  3. Cut up eggs and mix with 1 c. self rising flour and 1 cup milk.
  4. Pour over chicken
  5. Bring to a boil the soup and broth. Pour over the chicken
  6. Bake 350, 45 min
  7. **If you like add 2 cans mixed veggies or 1 bag defrosted veggies

This is quite diffrent... will try this fall!


My family enjoys making this same recipe, but without the eggs. One day when I was feeling froggy, I added a lot of vegetables - wild rice, onion, peas, carrots, mushrooms, pimento, cilantro - whatever I had in the fridge. We could hardly tell the difference, except for the cilantro. It just goes to show, if it ain't broke, don't fix it!


Too much butter


You may use less butter but it will be dry
