Milk Braised Pork

- 2-1/2 lbs boneless pork loin(from blade end) tied shopping list
- salt and pepper shopping list
- 1 Tbs olive oil shopping list
- 4 cloves garlic,minced shopping list
- 2 bay leaves shopping list
- 2-1/2 tsp minced fresh rosemary shopping list
- 3 c whole milk shopping list
- 1 Tbs zest,grated from 1 large lemon shopping list
- 2 Tbs heavy cream shopping list
- 3 Tbs minced parsley for garnish shopping list
How to make it
- Sprinkle the pork liberally with salt and pepper. Set oven rack in the middle position and heat oven to 325 degrees. In large dutch oven,set over med-high heat,heat the oil until it shimmers. Brown por on all sides,about 12 mins. Transfer to large plate;set aside.
- Return pot to burner,reduce heat to low,add garlic,bayleaves,and rosemary and cook,stirring,until fragrant ,about 45 seconds.
- Add the milk (slowly,so it doesn't boil over),lemon zest and 1/2 tsp salt,increase the heat to high,and using a wooden spoon,scrape any stuck bits from bottom of pot. Return pork and it's juices to the pot,set the heat to med-high and bring liquid to simmer. Cover pot with lid ajar,place in the oven and braise until center of roast reaches 145 degrees,30 to 50 mins.
- Transfer pork to serving dish,cover with foil to keep warm and set aside. Set pot over med-high heat and boil liquid,stirring occasionally,until it is reduced by half,about 10 mins. Remove the bay leaves,pour sauce into blender (being sure to vent lid),add the cream,and puree till smooth. Taste the sauce and add more salt and pepper,if necessary.
- Snip the twine around the pork and discard. Cut pork into thin slices,arrange on serving dish,pour sauce over meat, sprinkle with parsley and serve at once.
