Deluxe Chocolate Mousse Cake Recipe
CHOCOLATE MOUSSE CAKE This recipe came from an estate sale. I obtained it when I purchased the family collection from the Watson Estate in McKinney, Texas in 1991.

Ingredients
  • 8 ounces semisweet chocolate
  • 1/2 cup margarine
  • 8 eggs separated
  • 1 cup sugar
  • 1 teaspoon vanilla

Directions
  1. Preheat oven to 325 then melt chocolate with margarine over very low heat.
  2. Stir until smooth then set aside.
  3. Beat eggs with 3/4 cup sugar then gradually stir in chocolate and vanilla.
  4. Beat whites until soft peaks form then gradually add remaining sugar and beat until stiff.
  5. Gently fold whites into chocolate mixture then pour 3/4 of the batter into a spring form pan.
  6. Cover and refrigerate remaining batter then bake cake 35 minutes and cool completely.
  7. Spread remaining batter over top of cake then refrigerate overnight.
