Italian Muffin Meatballs

                    - 12 Muffin - Muffin Pan shopping list
- Large Bowl shopping list
- "1/2 Cup" Measuring Cup shopping list
- A Large coffee Cup shopping list
- 1/2 Pound pork sausage shopping list
- 1/2 Pound ground beef Chuck shopping list
- 2 Large eggs shopping list
- 1 Pack of No salt saltine crackers shopping list
- 6 oz of caned drained spinach shopping list
- 1 Large bell pepper shopping list
- 1 Large onion shopping list
- 1 Small can of tomato paste shopping list
- 1 Tsp. italian seasoning for the meatball mix shopping list
- 1 Tsp. italian seasoning for the breading crumbs. shopping list
- 1 Tsp. kosher salt shopping list
- 1 Tsp. cracked pepper shopping list
How to make it 
                    - Start by mixing beef and pork with the tomato paste in the bowl.
- Once it is mixed well, add the eggs and 1 Tsp. Italian seasoning.
- Let that set for a few minutes while you fry the diced bell peppers.
- Fry the peppers for 2 minutes & add diced onions for 2 more mins.
- During the frying; pat dry the spinach with towel and add to the mix.
- Add peppers & onion to mix & mash up everything with your hands.
- Crumble up half the pack of crackers and mash that into the mix.
- Cover and put in the fridge for 4 hours to let the meat mix marinate.
- After letting set, add the salt and pepper to the mix and mash again.
- Finely crush the other crackers with Italian seasoning for breading.
- Use the measuring cup to scoop the meat into 12 individual balls.
- Using a large coffee cup bread the meatballs with cracker crumbs.
- With the crumbs in the cup swirl the meatball around until coated.
- You can lightly spray Pam in the muffin pan & place each meatball.
- Bake on 300 for 30 mins, turn balls over and bake for 30 more mins.
