Ingredients
  • 12 Muffin - Muffin Pan
  • Large Bowl
  • "1/2 Cup" Measuring Cup
  • A Large Coffee Cup
  • 1/2 Pound Pork Sausage
  • 1/2 Pound Ground Beef Chuck
  • 2 Large Eggs
  • 1 Pack of No Salt Saltine Crackers
  • 6 oz of caned drained spinach
  • 1 Large Bell Pepper
  • 1 Large Onion
  • 1 Small can of tomato paste
  • 1 Tsp. Italian Seasoning for the meatball mix
  • 1 Tsp. Italian Seasoning for the breading crumbs.
  • 1 Tsp. Kosher Salt
  • 1 Tsp. Cracked Pepper

Directions
  1. Start by mixing beef and pork with the tomato paste in the bowl.
  2. Once it is mixed well, add the eggs and 1 Tsp. Italian seasoning.
  3. Let that set for a few minutes while you fry the diced bell peppers.
  4. Fry the peppers for 2 minutes & add diced onions for 2 more mins.
  5. During the frying; pat dry the spinach with towel and add to the mix.
  6. Add peppers & onion to mix & mash up everything with your hands.
  7. Crumble up half the pack of crackers and mash that into the mix.
  8. Cover and put in the fridge for 4 hours to let the meat mix marinate.
  9. After letting set, add the salt and pepper to the mix and mash again.
  10. Finely crush the other crackers with Italian seasoning for breading.
  11. Use the measuring cup to scoop the meat into 12 individual balls.
  12. Using a large coffee cup bread the meatballs with cracker crumbs.
  13. With the crumbs in the cup swirl the meatball around until coated.
  14. You can lightly spray Pam in the muffin pan & place each meatball.
  15. Bake on 300 for 30 mins, turn balls over and bake for 30 more mins.

Recently, I watched alton brown make meatballs in a muffin pan. Must give it a go. Thanks for sharing your recipe :)

Alterations


You can take a 1 inch piece of cheddar cheese or mozzarella-if you use Italian seasoning in the meatballs-and the cheese will "ooze out" when you cut into the meatballs. They're good with homemade marinara.
