Mothers Chiffon Cake 3 Generations Recipe
This is and was all of our favorite cake that my Grandmother made. We would beg her to make this for our birthdays. Grandma would change the middle fillings for our liking. We all had our favorites. She could cut it up to 6 layers.

Ingredients
  • 2 1/4 c sifted cake flour
  • 1 1/2 c Sugar
  • 3 teaspoos Baking powder
  • 1 teaspoon Salt
  • 3/4 c Water
  • 1'4 teaspoon Almond extract
  • 1 teaspoon Vanilla
  • 1/2 c veg oil
  • 5 egg yolks
  • 7 egg whites
  • 1/2 teaspoon cream of tarter

Directions
  1. You need a 10 inch tube pan, 4 inches deep, ( This cake makes enough to serve between 16 , 20 people)
  2. Pre-heat oven to 350
  3. Make sure all of your iredients and utensils are ready before you start mixing. Make your cake step by step as follows.
  4. 1. Sift flour before measuring, then spoon it lightly into a cup. DO NOT PACK OR SHAKE IT DOWN.
  5. 2. Sift flour again with sugar, baking powder and salt into a large bowl.
  6. 3. Measure water and mix in extracts.
  7. 4. Measure oil.
  8. Seperate eggs.Slightly beat the yolks.beat 7 whites until very stiff. grease and floure cake tube pan.
  9. Bake @ 350 for 45 min. 325 for last 10 min. for a total of 55 min.
  10. My grandma Chopped walnuts or pecan very fine and put them on the side of the cake. Also she would get creative with the the middle in between layers. She would cut the cake after cooling and sometimes it could be up to 6 layers.
  11. Butter cream frosting was always adorning the cake.

Alterations


Let the cake completely cool before you try to slice it. After you frost it keep in the fridge until ready to severe. It slices better.
