Chicken A La Maria Recipe
This recipe comes courtesy of the Better Homes test kitchen. It is rather low in calories and fat but high in flavor.

Ingredients
  • 3/4 cup fine dry Italian-seasoned bread crumbs
  • 2 Tbsp grated Parmesan cheese
  • 6 boneless chicken breasts
  • 1/2 cup sliced green onion
  • 2 Tbsp margarine
  • 2 Tbsp flour
  • 1 cup skim milk
  • 10 oz pkg frozen spinach, thawed and well drained
  • 3/4 cup fully cooked ham, diced
  • 1/8 tsp nutmeg (optional-see note)

Directions
  1. In a shallow dish, combine bread crumbs and cheese. Set half of the crumb mixture aside.
  2. Roll chicken in half of the crumb mixture to coat lightly.
  3. Place chicken in a 13x9-inch baking dish.
  4. In a small saucepan, cook green onion in margarine until tender.
  5. Stir in flour until blended. Add milk,; cook and stir over medium heat until thickened and bubbly. Add nutmeg and cook , stirring for two minutes more.
  6. Stir in spinach and ham.
  7. Spoon spinach mixture over chicken and sprinkle with reserved crumbs.
  8. Bake, uncovered for 40 to 45 minutes or until chicken is tender and no longer pink.
  9. 264 calories per serving, 7 g fat, 1 g fiber
  10. **Note: The recipe does not call for nutmeg, but I added it myself. I think it pairs well with the spinach.
