How to make it

  • In a shallow dish, combine bread crumbs and cheese. Set half of the crumb mixture aside.
  • Roll chicken in half of the crumb mixture to coat lightly.
  • Place chicken in a 13x9-inch baking dish.
  • In a small saucepan, cook green onion in margarine until tender.
  • Stir in flour until blended. Add milk,; cook and stir over medium heat until thickened and bubbly. Add nutmeg and cook , stirring for two minutes more.
  • Stir in spinach and ham.
  • Spoon spinach mixture over chicken and sprinkle with reserved crumbs.
  • Bake, uncovered for 40 to 45 minutes or until chicken is tender and no longer pink.
  • 264 calories per serving, 7 g fat, 1 g fiber
  • **Note: The recipe does not call for nutmeg, but I added it myself. I think it pairs well with the spinach.
