Frosted Pumpkin Doughnuts

- 2 eggs shopping list
- 1 cup sugar shopping list
- 2 tablespoons butter, softened shopping list
- 1 cup canned pumpkin shopping list
- 1 tablespoon lemon juice shopping list
- 4 and 1/2 cups all-purpose flour shopping list
- 2 teaspoon baking powder shopping list
- 1 teaspoon baking soda shopping list
- 1/2 teaspoon each, salt, shopping list
- ground cinnamon and ground nutmeg shopping list
- 1 cup evaporated milk shopping list
- oil for deep-fat frying shopping list
- Frosting: shopping list
- 3 cups confectioners' sugar shopping list
- 2 to 3 tablespoons orange juice shopping list
- 1 tablespoons orange juice shopping list
- 1 teaspoon grated orane peel shopping list
How to make it
- 1. In a large mixing bowl, beat eggs, sugar and butter until smooth. Beat in pumpkin and lemon juice.
- 2. Combine flour, baking powder, baking soda, salt, cinnamon and nutmeg; gradually add to pumpkin mixture alternately with milk. Cover and refrigerate for 2-hours.
- 3. Turn onto a lightly floured surface; knead 5-6 times. Roll to 3/4-in. thickness. Cut with a lightly floured 2 and 1/2-inch doughnut cutter.
- 4. In an electric skillet or deep fryer, heat oil to 375 degrees, a few at a time, until golden brown on both sides.
- 5. Drain on paper towels. Combine frosting ingredients; spread over cooled doughnuts.
- Makes about 3 dozen
