Ingredients
  • 2 pounds pork baby back ribs - ask your butcher to remove the silverskin and cut rack in half down the middle
  • ~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~
  • marinade:
  • 1/4 cup soy sauce
  • 3 tablespoons Hoisin sauce
  • 1 tablespoon sugar
  • 2 tablespoons honey
  • 3 tablespoons Mirin
  • 2 cloves minced garlic
  • 1 teaspoon minced fresh ginger
  • 1/8 teaspoon five-spice powder
  • 1 tablespoon rice wine vinegar
  • ~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~
  • Glaze:
  • 1 tablespoon each of honey, vinegar, soy and mirin

Directions
  1. For marinade, combine all ingredients in a large plastic ziplock bag.
  2. Cut ribs in between bones and trim off excess fat. Place ribs in bag, seal bag tightly and shake to marinade gets all over the ribs. Place in large bowl and refrigerate for at least 4 hours (overnight is fine), turning bag occasionally.
  3. Place ribs in large baking dish (with marinade) and cover tightly with foil. Bake at 350ºF for 1 hour or until ribs are tender.
  4. Line a baking sheet with foil and transfer ribs from baking dish to the baking sheet. Disgard the marinade.
  5. For glaze:
  6. Combine 1 tablespoon of each: honey, vinegar, soy, mirin in bowl. Mix and brush 1/2 of mix on ribs.
  7. Broil about 4-6" from heat til glazed (2-3 minutes). Turn and brush with rest of glaze, broil again.
  8. Transfer to serving platter and garnish with green onions, if desired

Hello, Luisa! These sound mighty fine!! Thank you for the marinade and basting recipes. Will use both. (I usually boil in water the ribs to remove lots of fat, and to jumpstart the cooking process.)Will try your ideas next time. thanks a gazillion! 555555555555555555555555555555

if you don't have Hoisin sauce, ketchup is just fine
