Ingredients
  • 1 lb. ground sirloin
  • 1lb. ground pork
  • 1/4 cup of milk
  • 1/3 cup Romano cheese
  • 1/3 cup Parm. Cheese
  • 1/4 cup fresh basil
  • 6 cloves of garlic, minced
  • 1/3 cup finely diced white onion
  • 1/2 cup italian breadcrumbs
  • your favorite pasta sauce
  • fresh mozzarella
  • 1 tablespoon butter
  • dash of EVOO, salt, & pepper

Directions
  1. Preheat oven to 350 degrees.
  2. Saute onions and garlic in a tablespoon of butter and a dash on EVOO. Cook until onion is transluscent and set aside.
  3. On a cutting board, juilienne basil (or chop it fine...I just really like to taste the basil in recipes.)
  4. In a large bowl, combine ground sirloin and ground pork, as well as parm and ramono cheese, bread crumbs, chooped basil, sauteed garlic and onion (should be cooled), and milk. Mix together well. Honestly, I just used my hands. **if you have the time, I recommend letting the mixture sit in the fridge for 15 or 20 minutes to let everything fall in love, but if you can't, I don't think it will hurt.
  5. Roll the mixture into balls about the size of a tennis ball or so (We like em big in Texas :)
  6. Brown meatballs in pan stovetop. Brown on all sides.
  7. Move browned meatballs to a baking dish and cover with foil. Bake for meatballs for 25 minutes.
  8. After 25 minutes, remove foil from baking dish and pour pasta sauce of the meatballs. Slice fresh mozzarella and place over meatballs and sauce. Return to oven uncovered and bake for 10 additional minutes, until cheese is melty.
  9. Remove from oven and serve over pasta, or eat them plain like me.
