Ingredients

8 large chicken breasts

Flour mixture:

flour, pepper, salt, paprika, parsley, garlic powder, onion powder, italian seasoning

3 cans (16 oz) Italian Stewed Tomatoes

3 tbsp cornstarch

3 tbsp oregano

1 can mushrooms drained

Shredded mozzerella cheese

Parmesean cheese

Directions

In 9 x 13 baking dish add enough olive oil to coat pan

Roll chicken in flour mixture

Place in pan and bake at 350 for 25 minutes

Meanwhile:

In saucepan simmer together:

stewed tomatoes, cornstarch, oregano and mushrooms, add seasonings to your taste

Take chicken out of oven and pour tomatoe mixture over chicken

Top with mozzerella cheese and at least 1/2 cup Parmesean cheese

Return to oven and cook 20 minutes or till chicken is done and cheeses are melted

Serve over pasta or with warm Italian bread

I added a little chopped garlic to mine (have to add garlic to EVERYTHING!) and didnt realize stewed tomatoes were so large and we personally like them chopped more so i threw them in the food pro and wala...! Great recipe though...my 3 yr old had seconds...she loved it. Thanks JLV1023!
