How to make it

  • In 9 x 13 baking dish add enough olive oil to coat pan
  • Roll chicken in flour mixture
  • Place in pan and bake at 350 for 25 minutes
  • Meanwhile:
  • In saucepan simmer together:
  • stewed tomatoes, cornstarch, oregano and mushrooms, add seasonings to your taste
  • Take chicken out of oven and pour tomatoe mixture over chicken
  • Top with mozzerella cheese and at least 1/2 cup Parmesean cheese
  • Return to oven and cook 20 minutes or till chicken is done and cheeses are melted
  • Serve over pasta or with warm Italian bread

    This was really good! I added a little chopped garlic to mine (have to add garlic to EVERYTHING!) and didnt realize stewed tomatoes were so large and we personally like them chopped more so i threw them in the food pro and wala...! Great recipe though...my 3 yr old had seconds...she loved it. Thanks JLV1023!
